Fruit Salad

Ingredients

    • 1 (29 ounce) cans peach slices, undrained
    • 1 (20 ounce) cans pineapple chunks, undrained
    • 1 (3 1/8 ounce) boxes dry vanilla instant pudding mix
    • 1 lb strawberries, stemmed and quartered
    • 1 bananas, sliced
    • 1/2 pint blueberries
    • 1 bunch grapes ( I use the red ones)
    • 1 -2 tablespoon sugar (optional)

Directions

  1. In a large bowl, combine peaches, pineapples, and vanilla pudding mix.
  2. This includes the juices from the cans.
  3. Mix well until pudding is dissolved.
  4. Stir in strawberries, banana, blueberries, grapes, and sugar if desired.
  5. Chill.

Orange Jello Pudding

I have yet to meet a kid that doesn't LOVE this.
3 c water
1 (3 oz) pkg orange gelatin
1 (3.4) oz package instant vanilla pudding mix
1 (3 oz) pkg tapioca pudding mix
1 (15 oz) can mandarin oranges
1 (8 oz) can crushed pineapple
1 (8 oz) carton whipped topping

In a saucepan, bring water to a boil. Whisk in gelatin and pudding mixes. Return to a boil, stirring constantly; boil for 1 minute. Remove from the heat and cool completely. Fold in oranges, pineapple and whipped topping. Spoon into a serving bowl. Cover and refrigerate for 2 hours. Yield: 12-14 servings.

2 EASY Fruit Salad Recipes

Sorry, I don't have any pictures for this.  But you can use your imagination.  But try it!! It's so good and easy!

First Recipe:

Apples
Bananas
Grapes
1 can Mandarine Oranges
1 can diced Pineapple
Any other fruit you like
1/2-3/4 can of orange juice concentrate

Cut fruit into bite size pieces.  Take a can of orange juice concentrate, still mostly frozen, but soft enough to spread, and mix together with fruit. Add as much as you need to coat your fruit. That's it! It's so easy and so good!  You can make the night before and it will keep in the fridge overnight.

Second Recipe: (just as easy)

Apples
1 can Mixed Fruit
1 can Mandarine Oranges
1-2 sliced Bananas
1 cup fresh Strawberries
Any Other Fruit You Like
1 can Peach Pie Filling

Cut fruit into bite size pieces. Mix together with pie filling.  Enjoy!!!  It's SOOO good!!

Snickers Salad

My Favorite!!!
2 c milk
2 pkgs instant vanilla pudding
1 carton cool whip
10 snickers fun size candy bars (Cut in bite size pieces)
4 Granny Smith apples (Cut in bite size pieces)

Mix milk and pudding.  Add cool whip.  Before serving, add candy bar pieces and apples.

Strawberry Pretzel Salad


2 c. pretzels, crushed  (I ended up adding more to make it easier to spread on the bottom of the pan)
4 tbsp. sugar
1/2 - 3/4 c. butter, melted

8 oz. pkg. cream cheese, softened
1/2 c. sugar
8 oz. carton Cool Whip
1 lg. box strawberry Jello
2 c. boiling water
2 pkgs. strawberries (frozen), thawed and drained

Mix pretzels, 4 tablespoons sugar, and butter together; press into bottom of 9 x 13 inch pan. Bake at 400 degrees for 6 minutes; cool.

In mixing bowl, fold Cool Whip into cream cheese and 1/2 cup sugar. Spread over cooled crust.

Dissolve Jello into boiling water. Add strawberries to Jello and refridgerate until jello starts to set, stirring occassionally.  Once Jello is starting to set, stir and pour over cream cheese. Chill and let set. Cut into squares to serve.

Ramen Noodle Salad

2 pkgs Ramen Noodles (Chicken or Beef)  Crunched up
1 bag or bowl of cabbage chopped
Green Onions (Optional)
Nuts- I usually use sunflower seeds, or you can use sliced almonds, or you don't have to use any!

Sauce:
1/3 c Vinegar
1/2 c sugar
1/2 c oil
2 pkgs of seasoning from Ramen noodles

Mix sauce together and pour over salad.  For crunchier noodles, add dressing up to 15 minutes before serving.  For softer noodles, add dressing an hour ahead of time or more.

Enjoy! This is one of my favorites!

Fruit Salsa with Cinnamon Chips

Fruit Salsa with Baked Cinnamon Chips

2 kiwis, peeled and diced
2 Golden Delicious apples - peeled, cored and diced
8 ounces raspberries
1 (16 oz) carton of strawberries, diced
2 tablespoons white sugar (more or less to taste)
1 tablespoon brown sugar (more or less to taste)
3 tablespoons fruit preserves, any flavor (I used strawberry)

10 (10 inch) flour tortillas
melted butter or butter flavored cooking spray

Cinnamon sugar:
1 cup white sugar
2 Tablespoons cinnamon

1. In a large bowl, thoroughly mix kiwis, apples, raspberries, strawberries, white sugar, brown sugar and fruit preserves. Cover and chill in the refrigerator at least 15 minutes. 

2. Preheat oven to 350 degrees. 

3.Coat one side of each flour tortilla with melted butter or butter flavored cooking spray. Sprinkle tortillas with desired amount of cinnamon sugar. Cut into wedges and arrange in a single layer on a large baking sheet. Spray again with cooking spray (not necessary if using melted butter). 

4.Bake in the preheated oven 8 to 10 minutes. Repeat with any remaining tortilla wedges. Allow to cool approximately 15 minutes. Serve with chilled fruit mixture. This salsa can also be serve with cinnamon graham grackers or cinnamon pita chips. Best when made and eaten the same day otherwise the fruit gives off so too much juice and it gets runny.

Homemade Croutons

9 cups crumbled bread
1/2 cup olive oil
1 1/2 tsp fresh pressed garlic
1 tsp garlic powder
1 tsp italian seasoning
sprinkle with real shredded parmesan cheese
1/2 tsp salt
1/2 tsp pepper
Bake at 400 for 10 minutes, toss in the pan and bake another 10 minutes. Or until crispy enough.

or....
6 cups bread
1/3 cup olive oil
2 tsp italian seasoning
1/4 tsp salt
1/4 tsp pepper
little bit of onion powder, and garlic powder
sprinkle with parmesan cheese before baking. Same bake time.

Try different seasonings to make them your style.

Pasta Salad

1 box of tri-colored pasta (or your favorite pasta), cooked and cooled
1 c pepperoni, cut up into small pieces
1 cucumber, diced
1 tomato, diced (you can leave this out if your family doesn't like tomatoes)
1 cup diced carrots, boiled until slightly tender (or you can shred them as shown above)
1/2 c parmesan cheese
1/2 c or more of Ken's Lite Caesar Dressing (the dressing it what makes it so good, along with the pepperoni)
Optional: Black olives, or any other veggies that you would like.  I usually leave the tomatoes and olives out since a lot of people don't care for them)


Mix it all together, chill, and serve.  It's delicious.  And if you want to put more pepperoni in, I don't think anybody will complain.  :-)

Classic Layered Salad





8 cups chopped iceberg lettuce
1 small  red onion, sliced, separated into rings
1 pkg. (10 oz.) frozen peas, thawed
1 pkg.  (6 oz.) OSCAR MAYER Smoked Ham, chopped
3/4 cup KRAFT Real Mayo Mayonnaise
1/4 cup  KRAFT Grated Parmesan Cheese
1 Tbsp. sugar
1 cup  KRAFT 2% Milk Shredded Cheddar Cheese
2 small tomatoes, chopped
LAYER lettuce, onions, peas and ham in large straight-sided clear glass bowl.
MIX mayo, Parmesan and sugar; spread over salad to seal. Refrigerate several hours or up to 24 hours.
TOP with Cheddar and tomatoes just before serving; toss gently.

Tri-Pepper Pasta Salad

1/3 cup Mayo with Olive Oil Reduced Fat Mayonnaise
1/3 cup  Light Balsamic Vinaigrette Dressing
2 cups whole wheat medium pasta shell, cooked
1   each red pepper, green pepper and yellow pepper, chopped
1 small red onion, chopped
1/2 cup  coarsely chopped fresh basil
1/2 cup KRAFT Shredded Parmesan Cheese
 
MIX mayo and dressing.
COMBINE remaining ingredients in large bowl.
ADD mayo mixture; mix lightly.

Cookie Salad

2 (3.4 ounce) packages instant vanilla pudding mix
2 cups buttermilk
12 ounces frozen whipped topping, thawed
1 (20 ounce) can pineapple chunks, drained
2 (11 ounce) cans mandarin oranges, drained
1/2 (11.5 ounce) package fudge stripe cookies
In a large bowl, mix together the pudding mix and the milk. Fold in the whipped topping. Mix in the pineapple chunks and mandarin oranges. Chill until ready to serve. Crush cookies and mix in just before serving.

Frozen Fruit Cups

1-6 oz. frozen lemonade
1-6 oz. frozen orange juice
2-1/2 c water
1 c sugar
1 box frozen strawberries
1 can crushed pineapple
1 small jar maraschino cherries
3 sliced bananas
3 cups peaches

Mix frozen juices with water.  Add sugar.  Divide into 12 paper or plastic cups (we always used the plastic punch cups).  Mix all fruit together.  Divide evenly into each cup.  Freeze until solid.  Allow them to thaw slightly before serving.

Broccoli and Cauliflower Bacon Salad

1 head broccoli -bite size pieces
1/2 head of cauliflower -bite size pieces
1 red or while onion, chopped or sliced
1 c sunflower seeds
Bacon, browned and crumbled (to taste)
1/2 c Raisins (Optional...If making for me, please leave them out!)

Dressing:
1 c mayo
1/2 c sugar
2 T Vinegar

Combine first list of ingredients.  Mix dressing together and pour over salad just before serving.

P.S.  Dressing is also great on Cabbage for cole slaw!
